Ginger Beer Recipe (non alcoholic)

Fresh Ginger
Sugar or Honey
Metal Ring for Mason Jar
Cloth Napkin (for the top of the mason jar)
Wooden Spoon (Do not use metal)
Ingredients
2 TBL Grated Ginger
4 TBL Sugar or Honey
4 C Water
Large Mason Jar
Directions
To begin, fill large mason jar with water warm enough to dissolve your sugar.
Mix in your sugar to the water and grate ginger into the mixture.
Mix with your wooden spoon.
Cover with cloth and screw the metal ring lid onto the mason jar, this allows for air to enter but no bugs or dust or enter.
Every 24 Hours add 3 TBL SPOON of sugar to keep feeding the ginger “bug” you are now growing! This is fermentation and you need to provide sugars for the fermentation to digest and consume, this is what create the "Ginger Beer”.
After 1 week-14 days you can strain some off and taste the batch. If it is too sweet let it consume more of the sugar. If it is just right feel free to add some fruit pieces or a little scoop of sugar and jar up the liquid (straining the grated ginger out) Set this aside on the countertop for a second ferment and then after 5 days place in the fridge. There should be some effervescence. :) Enjoy!
